The story behind

I’ll never forget the first time I had a real panna cotta during a summer outdoor dinner; I was amazed at how something so simple could taste so high-end. The name literally means 'cooked cream' and it hails from Northern Italy. It’s the ultimate dessert for when you want to impress guests without stressing out, as the fridge does most of the heavy lifting. I personally love serving this after a light pasta lunch or a cozy dinner. For a drink, a glass of sweet sparkling wine or a bold espresso is the way to go. It’s perfect for a fancy afternoon treat or as the grand finale to a special evening meal.

Instructions

  1. 1
Warm the cream and sugar in a small saucepan over medium heat, stirring until the sugar is fully dissolved (do not let it boil).
  2. 2
Take it off the heat and stir in the vanilla and the bloomed gelatin until the mixture is completely smooth.
  3. 3
Pour the cream into small molds or glasses and refrigerate for at least 4 hours until set.
  4. 4
To make the sauce, blend the strawberries with the powdered sugar and a splash of water, then strain it for a smooth finish.
  5. 5
Just before serving, drizzle the strawberry coulis over the chilled panna cotta and enjoy that perfect wobble.
