1Warm the cream and sugar in a small saucepan over medium heat, stirring until the sugar is fully dissolved (do not let it boil).

2Take it off the heat and stir in the vanilla and the bloomed gelatin until the mixture is completely smooth.

3Pour the cream into small molds or glasses and refrigerate for at least 4 hours until set.

4To make the sauce, blend the strawberries with the powdered sugar and a splash of water, then strain it for a smooth finish.
