The story behind
There's nothing like the scent of cinnamon filling the kitchen in the morning to wake everyone up with a smile. These pancakes are my favorite because they aren't your average boring breakfast; the apple adds an incredible moisture and texture. It reminds me of those lazy days off when the only important thing is enjoying a warm plate and a good cup of coffee. The secret is letting the apple soften just a bit before flipping them so they release all their sweetness. It's like eating apple pie but in breakfast form!
Instructions
-
1In a large bowl, mix the pancake flour with the ground cinnamon.
-
2Add the milk, egg, melted butter, and vanilla; whisk until no large lumps remain.
-
3Fold the apple cubes into the batter with a spatula.
-
4Heat a non-stick skillet over medium heat and add a little bit of butter.
-
5Pour a portion of the batter and cook until you see bubbles on the surface and the edges look set, just like in the photo.
-
6Flip carefully and cook the other side until golden brown. Serve with some maple syrup or caramel sauce.
