The story behind
I’m happy to share the recipe for Turon, arguably one of the most beloved snacks in the Philippines. It is a wonderful example of how simple ingredients can create complex textures. Often sold by street vendors, it is the quintessential afternoon treat. The magic of Turon lies in the contrast between the soft, sweet interior and the hard, amber caramel on the outside. I recommend enjoying it fresh and warm, perhaps with a cup of coffee or a scoop of coconut ice cream for an elevated experience. It’s a straightforward dish that never fails to satisfy a sweet craving.
Instructions
-
1Slice the bananas in half lengthwise, and then cut each half into two even pieces.
-
2Roll each piece of banana in brown sugar until it is thoroughly coated.
-
3Place the sugar-coated banana (and a strip of jackfruit if using) on one edge of the wrapper.
-
4Roll the wrapper tightly, tucking in the sides, and seal the edge with a dab of water.
-
5Heat the oil in a pan and sprinkle a bit of extra sugar into the oil to allow it to caramelize onto the surface of the rolls.
-
6Fry the rolls until they are golden brown and the sugar has formed a crisp coating. Drain on a wire rack to keep the caramel from sticking.
