The story behind
Hey! I have to tell you, the first time I tried this halwa was on a freezing winter afternoon. I learned that in Northern India, it's a beautiful tradition to make this when carrots are at their sweetest. My favorite part is definitely the scent of cardamom that fills the whole house while it simmers away. It’s the perfect grand finale for a special dinner, but it’s also amazing as a mid-afternoon snack with a hot, spiced masala chai. It’s basically a hug in a bowl!

1In a large heavy-bottomed pot, combine the grated carrots and milk over medium-high heat.

2Bring to a boil, then reduce heat; stir occasionally until the milk has almost completely evaporated and the carrots are soft.

3Add the sugar and ghee. You'll notice the mixture becoming glossy and slightly liquid again.

4Keep cooking and stirring constantly until the mixture thickens and the sugar caramelizes slightly with the fats.

5Stir in the cardamom powder and the nuts (you can toast them in a bit of ghee beforehand for extra flavor).

6Serve warm in small bowls and enjoy the rich texture.
