The story behind

The Lamington is an icon of Australian baking. Instructions

    Prepare a basic sponge cake by creaming butter and sugar, adding eggs, and finally the flour.

    Bake in a rectangular pan at 180°C (350°F). Let it cool completely, preferably overnight to make it easier to cut.

    Cut the cake into uniform squares as seen in the image.

    Dip each square into the melted chocolate icing and then roll it in the coconut until all sides are covered.

    Let them rest on a wire rack until the chocolate sets.
