The story behind
The Lamington is an icon of Australian baking. 1Prepare a basic sponge cake by creaming butter and sugar, adding eggs, and finally the flour.

2Bake in a rectangular pan at 180°C (350°F). Let it cool completely, preferably overnight to make it easier to cut.

3Cut the cake into uniform squares as seen in the image.

4Dip each square into the melted chocolate icing and then roll it in the coconut until all sides are covered.

5Let them rest on a wire rack until the chocolate sets.
