2Clean the turkey and dry the skin completely with paper towels to ensure it browns well.

3Mix the butter with the herbs and rub it generously both under the breast skin and on the outside.

4Fill the cavity with the onion and apples to maintain internal moisture.

5Place the turkey in a deep aluminum foil roasting pan to catch the drippings.

6Roast for approximately 30 to 40 minutes per kilo, basting the turkey with its own juices every hour.

7If the wing tips or legs brown too quickly, cover them with aluminum foil.

8Remove from the oven when the internal temperature reaches 74ยฐC and let it rest for 20 minutes before carving.
