This salsa is the epitome of artisanal cooking. Instructions

1Roast the tomatoes, chilies, onion, and garlic on a griddle (comal) until the skin is well charred.

2Peel the roasted garlic clove and place it in the molcajete with some sea salt; grind until a paste forms.

3Add the roasted chilies and mash well.
