It is the ideal accompaniment for grilled meats, often served alongside sides like pickled red onions.

Instructions

    Roast the tomatoes, chilies, onion, and garlic on a griddle (comal) until the skin is well charred.

    Peel the roasted garlic clove and place it in the molcajete with some sea salt; grind until a paste forms.

    Add the roasted chilies and mash well.
