Legend has it the francesinha was born of one emigrant's homesickness: a Portuguese man who returned from France in the 1950s and set out to reinvent the croque-monsieur for the bolder palate of Porto. The name means little Frenchwoman, a nod to those French roots, yet the result is unmistakably Portuguese. It is a monumental sandwich of bread layered with several meats, steak, fresh sausage, ham, blanketed in melted cheese and drowned in a hot, spicy sauce of tomato and beer that is the true heart of the dish. That sauce is what separates a great francesinha from a forgettable one. Simmered slowly, the beer, tomato, and spices concentrate until the sauce thickens enough to coat the back of a spoon. Too thin and it floods the bread; too thick and it loses its purpose as a bath. The cheese is melted on top under direct heat until it bubbles, forming a seal that traps the warmth inside. This is Sunday food, winter food, shared across café tables in Porto, almost always with fries for dipping into the sauce. Serve it steaming, the sauce pooling at the rim of the plate.
