The story behind
The first time I bit into a Banh Mi was at a tiny stall on a busy corner in Vietnam. It completely blew my mind how something that looks so simple can pack so many contrasts. Itβs the perfect offspring of French baking and vibrant Southeast Asian flavors. I personally love making this for a quick but cool lunch, or even a light dinner when I don't want to overcomplicate things. The best way to enjoy it is with a cold jasmine iced tea or a ginger lemonade to highlight the freshness of the cucumber. Without a doubt, it's my favorite sandwich in the world.

1Slice the baguettes open and toast them slightly until they are perfectly crunchy.

2Spread a generous layer of spicy mayo on both sides of the bread.

3Layer in your choice of meat (pork, chicken, or even tofu if you prefer).

4Stack the cucumber slices and pickled vegetables over the meat.

5Add the chili slices if you like heat, and finish with plenty of fresh cilantro.
