Choco Chunk Muffin

The story behind

The secret to a great chocolate muffin lies in the contrasts: the soft crumb against the crunch of chocolate chunks found in every bite. This recipe seeks that artisanal bakery aesthetic, where melted chocolate and solid fragments around it create a visually irresistible and deeply homemade experience.

Instructions

  1. 1
Preheat the oven to 190Β°C and line a muffin tin with brown paper liners.
  2. 2
In a large bowl, whisk together the dry ingredients: flour, cocoa, sugar, and baking powder.
  3. 3
In another bowl, whisk the egg with the milk and oil until combined.
  4. 4
Pour the wet ingredients into the dry and mix gently until just combined. Do not overmix to keep the muffin texture.
  5. 5
Fold half of the chocolate chunks into the batter.
  6. 6
Divide the batter into the liners and place the remaining chocolate chunks on top of each muffin to achieve the look from the image.
  7. 7
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. 8
Let cool on a rustic wooden board and scatter extra chocolate shards around for presentation.
