The story behind
Every time I smell onions and tuna sautéing together, I’m transported back to Easter vacations at the beach. I remember all of us sitting around the table, sealing the empanadas with a fork, and having a little contest to see whose looked the best. This recipe has Spanish roots, but we've simplified it at home to make it our own. They’re perfect for a light lunch or as an appetizer for a get-together. I suggest pairing them with some spicy habanero sauce, and to drink, an ice-cold lemonade or mint iced tea works like a charm.

1Start by sautéing the onion and tomato in a bit of oil until they are soft and fragrant.

2Add the drained tuna, season with salt and pepper, and cook for a few minutes until the juices evaporate.

3Place a spoonful of the filling in the center of each dough disc (don't overfill them so they don't burst).

4Fold the dough in half and seal the edges by pressing firmly with a fork.

5Place them on a baking sheet and bake at 190°C until they are beautifully golden. Serve warm and enjoy!
