The story behind
Sernik is one of the most beloved desserts in Poland. Unlike American cheesecakes, Sernik has a heartier and less creamy texture due to the use of full-bodied cheeses. As seen in the image, this version features a thin crust base and a tall, ivory-colored filling, elegantly decorated with a golden lattice pastry on top. It is presented on a wooden board, highlighting its artisanal and traditional character.

1Preheat the oven to 170°C (340°F) and line the bottom of a pan with the shortcrust pastry.

2Cream the butter with sugar and egg yolks; then add the cheese, vanilla, and starch.

3Whisk the egg whites until stiff peaks form and gently fold them into the cheese mixture.

4Pour the filling over the base and use the remaining dough to create the lattice top as shown in the photo.

5Bake for 60 minutes. Let it cool inside the oven with the door slightly ajar to prevent cracking.
