Traditional Sernik (Polish Cheesecake)

The story behind

Sernik is one of the most beloved desserts in Poland. Unlike American cheesecakes, Sernik has a heartier and less creamy texture due to the use of full-bodied cheeses. As seen in the image, this version features a thin crust base and a tall, ivory-colored filling, elegantly decorated with a golden lattice pastry on top. It is presented on a wooden board, highlighting its artisanal and traditional character.

Instructions

  1. 1
Preheat the oven to 170°C (340°F) and line the bottom of a pan with the shortcrust pastry.
  2. 2
Cream the butter with sugar and egg yolks; then add the cheese, vanilla, and starch.
  3. 3
Whisk the egg whites until stiff peaks form and gently fold them into the cheese mixture.
  4. 4
Pour the filling over the base and use the remaining dough to create the lattice top as shown in the photo.
  5. 5
Bake for 60 minutes. Let it cool inside the oven with the door slightly ajar to prevent cracking.
