Yakisoba is one of my favorite Japanese street foods for its simplicity and explosive flavor. I love using shrimp because they cook in seconds and perfectly absorb the aroma of ginger and onion. It's a vibrant, quick-to-prepare dish that always leaves you wanting one more bite.

1In a very hot wok with a little oil, sauté the shrimp until they change color; remove and set aside.

2In the same wok, add the cabbage and the white part of the green onions, sautéing for 2 minutes.

3Incorporate the noodles and a splash of water to help them loosen up.

4Add the yakisoba sauce and the reserved shrimp, mixing everything vigorously over high heat.
