The story behind
The first time I saw a Pljeskavica at a market in Belgrade, I was struck by its massive size and the smoky aroma wafting through the street. They told me it’s not just a burger; it’s a tradition perfected with the right mix of meats and a dash of baking soda to keep it incredibly juicy. I love how the intense savory flavor of the meat pairs with the crunch of raw onions and the creamy richness of kajmak. It’s the perfect dish for a weekend barbecue with friends, where the food is plentiful and the laughs are loud. To serve, nothing beats a warm lepinja flatbread and a side of ajvar for that sweet and spicy kick.

1In a large bowl, thoroughly mix the meats with garlic, paprika, baking soda, salt, and pepper.

2Knead the mixture for a few minutes and let it rest in the fridge for at least a couple of hours so the flavors can develop.

3Form large, thin patties with oiled hands (you can use plastic wrap to help get them very flat).

4Heat a grill or skillet over high heat and cook the patties for 4-5 minutes per side until well-browned and cooked through.

5Serve immediately on a large plate, topping the meat generously with fresh diced onions.

6Pair it with fresh green onions, a good dollop of ajvar, and warm flatbread.
