The story behind

Pani Puri is an interactive eating experience. You crack the top of the crispy shell, load it with filling, and dunk it into the 'Pani' (spicy water) before eating the whole thing in one bite for a burst of flavor.     Prepare the filling by mixing mashed potatoes with boiled chickpeas and chaat masala.

    Make the 'pani' by blending mint, cilantro, green chilies, and ginger with cold water and black salt.

    Gently poke a hole in the top of each crispy puri shell.

    Stuff a small amount of the potato mixture and chopped onions inside the shell.

    Fill the shell with the spicy water and tamarind chutney, then eat immediately.
