The story behind
This pizza reminds me so much of those improvised dinners when we didn't know what to cook and would open the fridge to see what was there. We always ended up boiling some eggs and slicing the ripest tomatoes we could find. I love it because the hard-boiled egg gives a completely different texture to traditional pizza, and the baked tomato releases a juice that mixes with the cheese in an amazing way. It's the kind of meal you enjoy most during a relaxed dinner, with a cold lemonade or a soda. It's one of those recipes that doesn't try to be fancy, just delicious and very much our style.
Instructions
-
1Prepare your dough base on a tray and spread a generous layer of tomato sauce.
-
2Cover the entire surface with cheese so that when it melts, it traps the other ingredients.
-
3Arrange the tomato slices all over the pizza; make sure they aren't too thick so they bake properly.
-
4Place the hard-boiled egg slices on top of the tomatoes, distributing them so everyone gets a piece.
-
5Put the pizza in the oven at 200°C (400°F) until the crust is golden brown and the cheese is bubbling.
-
6Remove the pizza and sprinkle some dried oregano on top before slicing.
