The story behind
This recipe came about one afternoon when I was craving something substantial yet balanced. The combination of chicken with a mountain of sautéed vegetables is a classic for dinners where we want to highlight the earthy flavors of mushrooms and the natural sweetness of onions. It's a dish that looks impressive because of its volume, but it's light and incredibly comforting with every bite.

1Pat the chicken breasts dry and season generously on both sides with smoked paprika, garlic powder, salt, and black pepper.

2In a large skillet over medium-high heat, heat one tablespoon of olive oil. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the pan and keep warm.

3In the same skillet, reduce heat to medium and add the remaining olive oil and butter. Add the sliced onions and sauté for about 5 minutes until translucent.

4Add the sliced mushrooms to the skillet with the onions. Sauté over medium-high heat for 8-10 minutes, stirring occasionally, until the mushrooms are golden and tender. Season with a pinch of salt and pepper.

5To serve, place a golden chicken breast on each plate.

6Crown the chicken with a generous 'mountain' of the mushroom and onion mixture.
