Pan-Seared Chicken with Mushroom Mountain

The story behind

This recipe came about one afternoon when I was craving something substantial yet balanced. The combination of chicken with a mountain of sautéed vegetables is a classic for dinners where we want to highlight the earthy flavors of mushrooms and the natural sweetness of onions. It's a dish that looks impressive because of its volume, but it's light and incredibly comforting with every bite.

Instructions

  1. 1
Pat the chicken breasts dry and season generously on both sides with smoked paprika, garlic powder, salt, and black pepper.
  2. 2
In a large skillet over medium-high heat, heat one tablespoon of olive oil. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the pan and keep warm.
  3. 3
In the same skillet, reduce heat to medium and add the remaining olive oil and butter. Add the sliced onions and sauté for about 5 minutes until translucent.
  4. 4
Add the sliced mushrooms to the skillet with the onions. Sauté over medium-high heat for 8-10 minutes, stirring occasionally, until the mushrooms are golden and tender. Season with a pinch of salt and pepper.
  5. 5
To serve, place a golden chicken breast on each plate.
  6. 6
Crown the chicken with a generous 'mountain' of the mushroom and onion mixture.
  7. 7
Garnish with freshly chopped parsley if desired and serve immediately.
