I love this recipe because it reminds me of those last-minute dinners where you want something that tastes like it’s from a fancy restaurant but is actually simple to make. Creamy chicken is a classic European-style dish that we've totally embraced for its comfort. It’s perfect for a date night or a nice family meal. I’d suggest serving it with some smooth mashed potatoes or a simple buttered pasta. For a drink, a crisp glass of Chardonnay pairs perfectly, or if you want something non-alcoholic, a lemon iced tea is great. It’s best enjoyed at lunchtime, but it also makes for a wonderful, comforting dinner.

Instructions

    Season the chicken with salt and pepper and sear it in a skillet with butter until fully cooked and golden.

    Remove the chicken and in the same pan, sauté the garlic and mushrooms until tender and fragrant.

    Stir in the heavy cream and thyme, turn down the heat, and let the sauce thicken slightly.

    Place the chicken back into the pan to coat it thoroughly with the creamy sauce for a couple of minutes.

    Serve hot and garnish with an extra sprig of fresh thyme on top.
