The story behind
This salad is the one I always order at family picnics. The contrast of the soft potatoes with the lightly fried sausage is my absolute favorite. The secret lies in the pickles and red onion, which cut through the creaminess with a touch of acidity. When I serve it with a fresh parsley sprig over the white plate, as in the photo, it looks appetizing and rustic. It's a homemade meal best enjoyed when the flavors have melded well, right before sharing.

1Cook the potatoes in salted water until tender but firm. Cool, peel, and cut into cubes.

2In a skillet, brown the sausage cubes to enhance their flavor. Cool before using.

3In a large bowl, whisk together the mayonnaise, sour cream, and Dijon mustard until a uniform dressing is formed.

4Gently fold the cooled potato cubes, browned sausage, pickles, and red onion into the dressing, making sure not to mush the potatoes.

5Season with salt and pepper to taste.

6Serve on a white plate as shown in the photo and garnish with a fresh parsley sprig before bringing to the table.
