I love serving them as a midday snack or an appetizer for a casual dinner party. Pair them with a zesty green chutney and a cold lemonade or a crisp ginger beer. 1In a large bowl, whisk together the chickpea flour, turmeric, cumin, salt, and chili flakes.

2Gradually whisk in the water until you have a thick, smooth batter that coats the back of a spoon.

3Toss in the potatoes, onions, and cilantro. Stir until all the veggies are fully smothered in the batter.

4Heat about 2 inches of oil in a heavy-bottomed pan over medium-high heat.

5Drop spoonfuls of the veggie mixture into the hot oil. Don't crowd the pan!
