Clover Club

The story behind

Named after a 19th-century Philadelphia gentlemen's club, the Clover Club is a sophisticated cocktail that balances fruit acidity with the botanical complexity of gin. As seen in the image, it stands out with its vibrant pink hue and a thick, silky white foam head. Typically served in a coupe glass, it is garnished with fresh raspberries on a pick, enhancing its visual elegance and aromatic profile.

Instructions

  1. 1
    Pre-chill your coupe glass.
  2. 2
Add gin, lemon juice, raspberry syrup, and egg white into a shaker without ice.
  3. 3
Shake vigorously (dry shake) for about 15 seconds to emulsify the egg white and create the foam shown in the photo.
  4. 4
Add plenty of ice to the shaker and shake again until thoroughly chilled.
  5. 5
Fine strain into the chilled glass and garnish with fresh raspberries on a cocktail pick.
