1Pre-chill your coupe glass.

2Add gin, lemon juice, raspberry syrup, and egg white into a shaker without ice.

3Shake vigorously (dry shake) for about 15 seconds to emulsify the egg white and create the foam shown in the photo.

4Add plenty of ice to the shaker and shake again until thoroughly chilled.

5Fine strain into the chilled glass and garnish with fresh raspberries on a cocktail pick.
