The story behind
Let me tell you, this cheesecake is one of those that saves any gathering. It reminds me so much of afternoons at home when we wanted something sweet yet special. The best part is how firm the cookie crust stays, and the contrast with the strawberry jam is just wonderful. Itβs ideal as an afternoon snack after a light meal or even as a late-night treat while watching a movie. I recommend pairing it with a cold glass of milk or a chamomile tea to end the day on a high note.
Instructions
-
1Mix the crushed cookies with the melted butter to form a paste and press it into the bottom of your mold.
-
2Beat the cream cheese with the sugar until it's very smooth and lump-free.
-
3Add the eggs one by one along with the vanilla, beating just enough to combine without adding too much air.
-
4Pour the mixture over the cookie crust and bake at 160Β°C (320Β°F) for about 50 minutes or until the center is almost set.
-
5Let it cool completely and then refrigerate for a few hours so it sets perfectly.
-
6Before serving, spread a generous layer of strawberry jam on top and it's ready to enjoy!
