The story behind
If there's one thing that takes me straight back to my childhood, it's the smell of pasta browning in the pot. This fideo soup was a daily ritual in my house, that first course that made you feel like you were finally home. I love it because it's simple, unpretentious, but with a flavor that resets your soul. It's the perfect lunch for a busy day or when the weather gets a bit chilly and you just want something to pamper you. I always pair it with a few drops of lime and a slice of avocado, and to drink, nothing beats a cold lime water with chia seeds. It's one of those dishes best enjoyed while sitting down to chat with a loved one as the steam rises to your face.
Instructions
-
1Blend the tomatoes with the onion and garlic using a splash of water until you have a very smooth sauce.
-
2In a pot, heat the oil and brown the noodles, stirring constantly so they don't burn, just until they reach a beautiful golden color.
-
3Pour the tomato sauce over the golden noodles and let it cook for a couple of minutes until it turns a deeper red.
-
4Add the chicken broth or water, cover the pot, and bring it to a boil over medium heat.
-
5Cook for about 10 minutes or until the pasta is tender but not mushy.
-
6Taste for salt, serve very hot, and get ready to feel happy.
