The story behind
I have to tell you, the first time I saw Lutefisk I didn't know what to expect, but it's quite the experience. It's the star of the holiday season in Norway and Sweden. Legends say it dates back centuries to when Vikings preserved fish using wood ash. What I love most is the contrast: the fish is incredibly delicate, almost silken, and then you hit that salty, fried bacon... wow! It's the ultimate winter comfort food. It's best enjoyed with mushy peas and roasted potatoes, and if you happen to have some Aquavit nearby, you’ve got the perfect pairing.

1Place the fish pieces in a baking dish, skin-side down.

2Sprinkle salt over the top and let it sit for about 10 minutes; then drain any excess water it releases.

3Cover the dish with foil and bake at 200°C (400°F) for about 15 to 20 minutes until the fish is translucent.

4While the fish is baking, fry the bacon in a pan until it's perfectly golden and crunchy.

5Carefully lift the fish out (it's very delicate!) and plate it.

6Drizzle the bacon fat and the crispy bits right over the cod.

7Serve with the mashed peas and potatoes on the side to match that beautiful photo.
