The story behind

1In a heavy pot, fry the bacon until crispy, then set aside while keeping the fat in the pan.

2Sear the beef cubes in the bacon fat until they are deeply browned on all sides.

3Toss in the carrots and onions, cooking for a few minutes until they start to soften.

4Stir in the tomato paste and garlic, letting them cook for a minute until fragrant.

5Pour in the red wine and scrape the bottom of the pot to release all those tasty browned bits.

6Add the beef stock and the cooked bacon back in, cover, and simmer on very low heat for about two hours.

7Add the mushrooms and continue simmering for another 30 minutes until the beef is incredibly tender.
