The story behind

I remember the first time I tried making this French stew; I was amazed at how a little patience and a decent bottle of wine could completely transform the kitchen. It’s the kind of meal I love preparing on a chilly Sunday, letting the aroma fill the whole house while the beef becomes so tender it practically falls apart. I enjoy serving it for a cozy dinner with friends, paired with creamy mashed potatoes and a crusty piece of baguette to soak up every last drop of sauce. It’s like a hug in a bowl!

Instructions

  1. 1
In a heavy pot, fry the bacon until crispy, then set aside while keeping the fat in the pan.
  2. 2
Sear the beef cubes in the bacon fat until they are deeply browned on all sides.
  3. 3
Toss in the carrots and onions, cooking for a few minutes until they start to soften.
  4. 4
Stir in the tomato paste and garlic, letting them cook for a minute until fragrant.
  5. 5
Pour in the red wine and scrape the bottom of the pot to release all those tasty browned bits.
  6. 6
Add the beef stock and the cooked bacon back in, cover, and simmer on very low heat for about two hours.
  7. 7
Add the mushrooms and continue simmering for another 30 minutes until the beef is incredibly tender.
  8. 8
Garnish with fresh parsley and serve hot alongside your favorite sides.
