The story behind
Rogan Josh is a staple of Kashmiri cuisine, brought to the region by the Mughals. The name literally translates to 'red juice' or 'red passion,' referring to the signature color provided by Kashmiri chilies and alkanet root (ratan jot). It is a soul-warming dish where the lamb becomes incredibly succulent, served in a traditional copper bowl for an authentic touch.

1Heat ghee in a heavy-bottomed pot and brown the lamb pieces in batches.

2Add whole spices (cardamom, cinnamon, cloves) and sauté until aromatic.

3Stir in the chili powder, fennel powder, and ginger powder, adding a splash of water to prevent burning.

4Gradually add the whisked yogurt while stirring constantly to prevent curdling.
