The story behind
Enchiladas Suizas are famous for their balance between the chili's heat and the cream's smoothness. As seen in the image, they are traditionally presented in a clay dish, topped with white onion rings, a touch of sour cream, and fresh cilantro. The melted cheese over the bright green sauce creates an irresistible combination that is a staple of Mexican breakfasts and lunches.
Instructions
-
1Boil the tomatillos and peppers in water until they change color. Blend them with a piece of onion, garlic, and the cream until smooth.
-
2Lightly fry the tortillas in oil so they soften without breaking.
-
3Fill each tortilla with the shredded chicken and roll them up, placing them in a heat-proof dish.
-
4Smother the enchiladas generously with the hot green sauce.
-
5Cover with shredded cheese and bake or broil until the cheese is melted as shown in the photo.
-
6Garnish with onion rings, a bit more cream, and fresh cilantro before serving.
