The story behind

I’ve always felt that Champon is the ultimate comfort food. It actually originated as a way to provide filling meals for students on a budget in Nagasaki, and it's stuck around because it's just that good. It's my go-to for a cozy dinner. I'd pair it with some chilled Oolong tea to balance the richness of the broth. It’s perfect for a midweek meal when you want something that feels like a big, warm hug in a bowl.

Instructions

  1. 1
Heat a bit of oil in a wok and stir-fry the pork slices until browned.
  2. 2
Toss in the shrimp, fish cake, and all the veggies. Stir-fry on high heat for a minute or two until slightly softened.
  3. 3
Pour in the broth and soy sauce. Bring it to a quick boil.
  4. 4
Add the noodles into the soup and let them simmer for about 2 minutes so they soak up all that savory flavor.
  5. 5
Pour into large bowls, pile the toppings high, and eat it while it's steaming hot!
