The story behind
This is one of those recipes that I make during the week when I want something with real flavor but without complicating my life. The secret is in the whole garlic: you let it brown in the pan until it softens inside, and when you bite into it with the meat and chipotle, the flavor is incredible. The beans in the pot are the usual ones, heated in their own broth. Steamed vegetables maintain balance. It's homemade Mexican food at its finest: simple, nutritious, and with character.

1In a large skillet, heat the oil over medium heat and add the whole garlic cloves; sauté for 5 minutes until golden brown and tender.

2Add the sliced onion to the skillet and sauté until translucent.

3Increase the heat, add the strips of meat seasoned with salt and pepper, and quickly sear until browned on the outside.

4Pour the blended chipotle sauce over the meat, reduce the heat to low, cover, and cook for 15 minutes to allow the meat to absorb the smoky flavor.

5Meanwhile, place the chopped vegetables in a steamer and steam for 8 minutes (they should be al dente, not mushy).

6Heat the beans from the pot in a small saucepan, adjusting the salt to taste.

7Serve a generous portion of the meat with its chipotle juices and whole garlic cloves, the steamed vegetables on the side, and a steaming bowl of beans from the pot. (or on the same plate)
