The story behind
You haven't truly lived until you've torn into a fresh, hot bhatura and scooped up a huge bite of spicy chole. It’s a classic from North India that’s usually eaten for breakfast, but honestly, it’s a winner at any time of day. I love making this when friends come over because it feels like a party. Pair it with a cold yogurt drink or a fresh lemonade. It's best enjoyed when you have nowhere to be and can just dive into the flavors.
Instructions
-
1Mix the flour, yogurt, and a pinch of salt. Knead into a soft dough and let it rest for about an hour to get that perfect puff.
-
2Sauté onions until golden, then add tomato puree and your spices like cumin, ginger, and garam masala.
-
3Toss in the chickpeas with some water and let it simmer until the gravy is thick and flavorful.
-
4Roll out small portions of dough into circles and fry them in very hot oil until they puff up beautifully.
-
5Serve while the bread is still hot and crispy with a side of onions and lemon wedges.
