The story behind
Hey! Looking at your photo made me so hungry; it took me straight back to Sunday breakfasts at my grandma's house. She always said the secret isn't in how complicated the recipe is, but in making sure the tomatoes are perfectly ripe so the sauce stays naturally sweet. It's such a humble yet wonderful dish because you can do magic with just a few ingredients. I enjoy them most in the morning with a hot cup of spiced coffee and good company. If you're feeling extra hungry, serve them with some refried beans on the sideโyou can't go wrong!

1Boil the tomatoes and the pepper in water until the skins start to peel off.

2Blend the boiled tomatoes, pepper, garlic, and onion with a pinch of salt until you get a very smooth sauce.

3Heat a tablespoon of oil in a pan and fry the sauce over medium heat for about 10 minutes to develop the flavor.

4In a separate pan, lightly pass the tortillas through hot oil just to soften themโdon't let them get crispy.

5Dip each tortilla into the hot sauce, fold it onto the plate, and pour a bit more sauce over the top.

6Finish by garnishing with crumbled cheese, cilantro, avocado slices, and some fresh cherry tomatoes as seen in the photo.
